Strawberry, Coconut and Raspberry Protein Muffins
  • INGREDIENTS:
  • 2 scoop raspberry Protein Powder (approx. 60g protein)
  • 113g coconut
  • 368g wholemeal self raising flour
  • 35g Artificial Sweetener
  • 2 tablespoons baking powder
  • 500ml Skimmed milk
  • 2 large eggs
  • 125g cup olive oil
  • 1/2 teaspoon vanilla
  • 255g strawberries, hulled and chopped

DIRECTIONS:

In one bowl, mix the raspberry protein powder, coconut, flour, sugar, baking powder and salt together. In a separate bowl, mix the milk, eggs, oil, and vanilla together. Fold the berries into the flour mixture. Add the liquid ingredients and stir until just combined. Fill greased muffin tin 2/3 full of mixture and bake at 400°F/200c for 20-25 minutes, or until done. Makes approx. 30 Cakes
